It’s the Small Things

This week I finally got into the Halloween Spirit (and candy)!

Halloween is my favorite holiday and I love the feel, look and smell of it. You know the smell, when you can smell Fall or a wood stove for the first time….. That always reminds me of Halloween.

The American Horror nights with the Husband and our friend Cannon! We started watching American Horror last year and making fun food, drinking wine and hanging out! Such fun nights!

The Pretty Little Liar Halloween special was this week! And if that was not great on its own, my friend and fellow blogger Arantha came over to watch with me. We made a fun fall fruit and cheese plate,  ate some rotisserie chicken and drank some red wine. Everything was healthy until we broke into the Halloween candy and made ourselves sick because we ate too much.  I guess you never learn…..

Caramel Apple Cupcakes with Cinnamon Cream Cheese Buttercream Frosting

I made these cupcakes for my friend Arantha’s birthday!

The husband helped me decorate. I had another decoration idea but it failed miserably so I am going to work on that and perfect it before I post about it. . .

This is such a great, delicious and fun treat! I LOVE LOVE LOVE caramel apples and basically anything that has caramel! And these did not disappoint.

I did a semi homemade recipe for this to save some time – but please feel free to use your favorite cake recipe.

Caramel Apple Cupcakes

Adapted from Something Shiny

What You Need:

1 box of yellow or spice cake mix

Two peeled and sliced up apples

1 Tablespoon sugar

3/4 teaspoon ground cinnamon

Half a lemon

35 caramels (I use the ones you can microwave and make caramel apples)

1 teaspoon heavy cream or milk

Instructions

Make the cake according to the instructions on the box.

In a small bowl combine the apples, sugar, cinnamon and lemon. Mix it well and let it rest while you make the caramel

Melt half the caramel with the heavy cream (adding the cream will make the caramel not hard when the cupcakes cool.

After you have poured the cupcakes in the cupcake tins put the apples
in the middle then spoon the caramel on top.

Bake at 350 degrees for 18 – 22 min

Let them cool for 15 min in the cupcake tins on a cooling rack then take them out and let them cool all the way before you frost.

Use the left over frosting to decorate

Cinnamon Cream Cheese Buttercream Frosting

What You Need:

4 oz (1/2 block) cream cheese, room temperature

1 stick (4 oz) butter, room temperature

1 teaspoon vanilla

3-4 cups powdered sugar

1/2 teaspoon cinnamon

1/3 cup heavy whipping cream

Directions

Beat butter thoroughly until smooth. Scrape bowl and add 1 cup sugar beating thoroughly. Add vanilla; beat. Add remaining 2 more cups sugar and cream cheese – mix until combined.

Add heavy cream and beat on high until light and fluffy. This will take a few minutes and you’ll need to scrape the bowl a few times during the process. If the mix seems too thin, add more sugar a little at a time until it reaches piping consistency. If it’s too thick, add more cream (or milk).

Fall is in the air – well a lot of people want it to be

So yeah yeah everyone loves Fall. It’s their Favorite season blah blah blah.

But who cares. There’s a reason everyone loves fall! It’s the best season ever!  Pumpkin Spice Latte, fun warm snuggly clothes, football!

And yes it’s also my favorite season. I took an unofficial survey with work people, family people and friend people and all but one said Fall/Autumn. The only person who didn’t was my dear friend Natisha who said and I quote

“I’m watching the first movie now but I like season six. I love Smith and Samantha together! But season one is good too!”

Which I totally agree with but maybe I should have been more specific!

So it’s official – Fall is the best season of them all!

Here are things most New Mexican’s look forward to in the Fall.

  1. The roasting of green chile – This is by far the best smell of all time. If “they” could put that smell in a candle or spray or something “they” would be rich (I don’t know who they is) – This weekend I went by a local grocery store and the line to get your green chile roasted was 15 deep and the wait was over three hours, and no one cared! If you’re not from New Mexico or have never lived here or been here during this time – you have no idea what I am talking about and you are missing out. Yummmmmm mouthwatering….
  2. The Balloon Fiesta – This something New Mexico is known for that has nothing to do with food and is not negative.  The Balloon Fiesta is an international affair, people come from all over the world to see hundreds of balloons ascend the skies and light up the night! It’s beautiful and something all New Mexican’s have a huge sense of pride in. I helped a co-worker study for her ballooning piloting licenses (don’t know how much help I was) but that test is no joke. She has an awesome balloon and personal blog – check it out here.
  3. The Whole Enchilada Fiesta – This is a Southern New Mexico tradition that I was privileged enough to be part of when I lived in Las Cruces. The Whole Enchilada Fiesta is the celebration of the making of the biggest enchilada in the world. I kid you not this is in The Guinness Book of World Records. The person who makes the enchilada is my dear friend Roberto of Roberto’s restaurant. It’s a fun event and something most southern New Mexican’s look forward to.
  4. The opening of McCall’s Pumpkin Patch – Picking out a pumpkin, going to a haunted pumpkin patch, going through a corn maze by day and “haunted” corn maze by night – what more could you ask for. Oh yes – you are support local business!
  5. The Lobo Aggie game – With Fall weather brings fun fall sports. And New Mexico only has two Division One schools so the rivalry is fun! And they are both not good enough to be annoyingly serious. But – Go Aggies!!!
  6. The change in weather – A big reason Fall is a favorite, for New Mexicans and a lot of other people all over the world is the cooler temps.  In New Mexico it’s hot. We live in the desert so when Fall season is upon us, the break from 100+ degree temps is a much needed relief!
  7. The smell – For me, this might be weird, but I associate a smell with Halloween and Fall. The smell of wood stoves. I LOVE that smell! It reminds me of my childhood and Halloween which is my most favorite holiday EVER! Please tell me other people know what smell I am talking about. Wood stove fires in the evening? Anyone?

Those are some of the things we NMers look forward to. Also on the list is the State Fair – AQ has an awesome state fair with awesome food – yummm Indian Tacos, Fry Bread and Sparx’s singing in the background!
