Tropical Ginger Punch and Tea Sandwiches

As promised here are some recipes I made for the baby shower I hosted last Saturday!

Tropical Ginger Punch

I made this drink for the shower, I tripled the recipe since it was for so many people (and I really like vodka!) It’s delicious, light and summary!

What you need:

3 cups orange juice

3 cups pineapple juice

1 tablespoon finely grated peeled fresh ginger

2 cups vodka

4 cups (32 ounces) chilled ginger ale or club soda

Orange wedges, for garnish (optional)

Directions

In a large pitcher, stir together orange juice, pineapple juice, ginger, and vodka.

Refrigerate until cold, at least 1 hour (and up to 1 week).

 Just before serving, stir in ginger ale.

Serve over ice, garnished with orange wedges, if desired.

Tropical Ginger Punch

I also made these delicious tea sandwiches! Yumm so good and a little prissy!

Classic Cucumber Tea Sandwich

What you need:

4 ounces cream cheese

1/4 cup finely chopped fresh herbs, such as flat-leaf parsley, basil, tarragon, or mint (I used mint because we grow it in our back yard)

8 slices wheat bread (I used different types of bread for fun)

1 piece (4 inches) cucumber, very thinly sliced into rounds

2 tablespoons softened butter

Directions

Place cream cheese and herbs in a bowl; stir with a rubber spatula until combined.

Spread cream cheese mixture on 4 slices of bread; layer with cucumber. Spread remaining slices of bread with butter. Place, butter side facing down, on radishes. Trim crusts; cut sandwiches in half.

Goat Cheese-Pecan Finger Sandwiches

What you need:

4 ounces goat cheese, softened

3 ounces cream cheese, softened

1/2 cup finely chopped toasted pecans

2 tablespoons chopped fresh parsley

14 bread slices, divided (I used different types of bread)

Directions

Stir together goat cheese, cream cheese, pecans, and parsley.

Spread on 7 bread slices.

Top 7 more bread slices with cheese-covered bread slices.

Remove crusts; cut into desired shapes.

Tea Sandwiches

    That punch looks great, but with gin for me! perfect sandwiches to go with such a drink on a hot day. looks great.

      Gin sounds like a good idea! I wanted to try with rum too and have some rum punch! The sandwiches are delicious and I am a meat person – but these were surprisingly satisfying.

    I think I am going to make these sandwichs for dinner tonight. These seem like a nice light dinner for the summer. And the tropical ginger punch looks delicious!

      The sandwiches are so tasty and fun! You can use other fresh herbs and veggies. I am so glad you are going to try them! And the tropical ginger punch is delicious!!
